Actually this is still true.Starbucks (or other major chains, Tullys, Peetes, Caribou, Seattles Best...etc) uses very average quality beans, and over roasts them, giving them a slightly bitter, but strong flavor.Coffee should actually be viewed more like a steak. You would never ask for a high quality steak to be well done. 'Well done' in this case means burnt, and imparting the smoky-grilled flavor. In a high quality steak you want to impart as little flavor as possible, and unlock the natural flavor.Same is true with coffee. If you have a cheap coffee, burn the hell out of it so it is bitter and nasty. If you have a high quality coffee you should roast it light, so when you are drinking it, you are tasting the coffee, not the 500 degrees.*also, 500 degrees is a pretty high temp. at my shop we usually go up to 470 for a good lighter roast. |
